Coconut and Lemon balls

Energy balls are a great on-the-go snack. Make them in bulk and enjoy them throughout the week.

Ingredients

Makes 10

 

90g desiccated coconut

80g unsalted raw brazil nuts

3 tbsp. lemon juice

2 tbsp coconut oil

2 tbsp. maple syrup

1 tbsp. lemon zest

1 tsp vanilla extract

 

Method

  1. Blend the brazil nuts, 45g of the desiccated coconut, vanilla, maple syrup and lemon juice in a food processor until it has combined.
  2. Add the oil and pulse until combined.
  3. Roll into bite-size balls and place in the fridge for 20 minutes.
  4. Sprinkle the remainder of desiccated coconut and the lemon zest onto a plate and roll the balls on the plate until fully covered.
  5. Enjoy!

      So glad you liked them 🙂 Well if you liked the Coconut and Lemon Balls try my recipe for Protein Balls. All you need are;

      1 cup of dates.
      100g of mixed nuts (you can use any variety of nuts).
      50g of a mixture of pumpkin, sunflower and linseeds (you can add anything you like i.e. chia seeds, goji berries etc).
      Blend them up in a blender.
      Roll the mixture into walnut size balls.
      Roll them in desiccated coconut or cocoa or even a bit of both. Enjoy!
