Coconut and Lemon balls
Energy balls are a great on-the-go snack. Make them in bulk and enjoy them throughout the week.
90g desiccated coconut
80g unsalted raw brazil nuts
3 tbsp. lemon juice
2 tbsp coconut oil
2 tbsp. maple syrup
1 tbsp. lemon zest
1 tsp vanilla extract
- Blend the brazil nuts, 45g of the desiccated coconut, vanilla, maple syrup and lemon juice in a food processor until it has combined.
- Add the oil and pulse until combined.
- Roll into bite-size balls and place in the fridge for 20 minutes.
- Sprinkle the remainder of desiccated coconut and the lemon zest onto a plate and roll the balls on the plate until fully covered.
